Rayalaseema Paaya Curry is a rich, spicy, and flavorful Andhra dish made with mutton trotters (goat legs). It’s traditionally enjoyed with ragi sangati, steamed rice, dosa, idli, or chapati.

Ingredients

For the Paaya

  • 4 cleaned mutton trotters (paaya)

  • 1 tsp turmeric powder

  • 1 tbsp ginger-garlic paste

  • Salt to taste

  • 6 cups water

For the Curry

  • 3 tbsp oil

  • 2 onions, finely sliced

  • 2 tomatoes, chopped

  • 2 green chilies, slit

  • 1 sprig curry leaves

  • 1 tbsp ginger-garlic paste

Spices

  • 1 tsp turmeric powder

  • 2 tsp red chili powder (Rayalaseema style)

  • 2 tsp coriander powder

  • 1 tsp cumin powder

  • 1 tsp garam masala

  • 1 tsp black pepper powder

  • Salt to taste

Whole Spices

  • 1 bay leaf

  • 1-inch cinnamon stick

  • 3 cloves

  • 2 cardamom pods

  • 1 star anise (optional)

Garnish

  • Fresh coriander leaves

  • Lemon wedges

Preparation

Step 1: Pressure Cook the Paaya

  1. Wash the trotters thoroughly.

  2. Add them to a pressure cooker with turmeric, salt, ginger-garlic paste, and water.

  3. Pressure cook for 8–10 whistles (or about 45–60 minutes) until tender.

  4. Reserve the stock; do not discard it.

Step 2: Prepare the Curry

  1. Heat oil in a heavy-bottomed pan.

  2. Add whole spices and sauté for 30 seconds.

  3. Add onions and fry until golden brown.

  4. Add curry leaves, green chilies, and ginger-garlic paste. Cook until the raw smell disappears.

  5. Add tomatoes and cook until soft.

  6. Mix in turmeric, chili powder, coriander powder, cumin powder, pepper powder, and salt.

  7. Cook the masala until the oil separates.

Step 3: Finish the Curry

  1. Add the cooked paaya along with the reserved stock.

  2. Simmer on low heat for 20–25 minutes so the flavors combine well.

  3. Add garam masala and simmer for another 5 minutes.

  4. Garnish with chopped coriander leaves.
